Ingredients

for 10 pops

Yogurt Pops

  • 1 cup plain greek yogurt
  • 8 oz fresh strawberries, washed and hulled
  • 2 tablespoons maple syrup, or sweetener of choice (optional)

Matcha White Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • 1 teaspoon matcha powder

Preparation

  1. To a food processor or high speed blender, add yogurt, strawberries, and sweetener. Pulse for a few seconds, just until combined, making sure to keep the yogurt mixture thick.
  2. Line a baking sheet with parchment paper. Place dollops of the yogurt mixture on the sheet, ensuring there is space for popsicle sticks under each. Add popsicle sticks to the bottom of each yogurt dollop and freeze for 2 hours, or until set.
  3. Once pops are frozen, put a medium pan on low heat and add white chocolate chips and coconut oil. Stir until melted. Transfer to a bowl and stir in the matcha powder until smooth.
  4. Remove yogurt pops from the freezer and dip each pop into the matcha white chocolate. You can dip the full pop, half the pop, or drizzle the chocolate on top.
